I’ll start this blog by saying that I am NOT a food photographer or any kind of a photographer so please forgive the poor quality of this picture. I’ll be working on making better looking plates as we keep going on this journey.
A couple years ago, I became intrigued by the high fat low-carb way of life. I haven’t always lived by it (especially in Europe [oh the croissants]), but I’ve done my best to stick to it pretty well when I’m home. As much as I travel it can be a little daunting until this last year or so when I started staying in places that allowed me to cook in them (ie; Homewood Suites and with family and friends).
It’s been a ritual in our home to make these every Sunday. Full disclosure, we are not going to be eating them as regularly anymore (the decision was made the night after I made these) as we are working to really clean up our nutrition and even though these are high protein and lower carb, we want to cut carbs EVEN MORE! We went way overboard over the holidays and ate terribly (for us) allowing too many sweets and too many carbs into our daily diet. More to come on that in a future blog post.
Moving on to the good stuff. I hope you enjoy these as much as we have and let me know if you make them. Also, let me know if you make any of your own changes to the recipe so I can try it.
Almond Flour Waffles
2 cups fine ground almond flour
1/2 tsp baking soda
1/2 tsp salt
1 tbsp cinnamon
2 tbsp honey
8 eggs
1 tbsp vanilla extract
Combine dry ingredients and whisk and then add wet ingredients and mix thoroughly. When your waffle maker is ready, us 1/2 cup to make one waffle. You should get 4 waffles out of that batter.

NOTE: One of these waffles if filling enough for a meal. When you see the nutritional info below, it may look surprising high in calories and fat, but if you only eat one and take care of your nutrition the rest of the day, you’ll be fine. Remember, this is an indulgence and not suggested to be eaten daily (unless you need to eat a ton of calories a day)!
